This year, we’re starting it off right with the perfect bread to sweeten up your January. The delicious balance between the creamy frosting and sweet spice of this bread will make any day better. Try this Lion House recipe and comment your thoughts below!
Makes 24 (2X2-inch) bars
2 cups sugar
1 cup butter, softened
4 ripe bananas, mashed
2 teaspoons lemon juice
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
½ cup buttermilk
1 cup chopped walnuts, optional
Preheat oven to 350 degrees F. Grease and flour a 12×17-inch jelly pan.
Cream sugar and butter in a large mixing bowl until smooth. Add eggs and bananas and beat until smooth. Add lemon juice and mix briefly. Mix flour, salt, and baking soda together in a separate bowl; add to creamed mixture alternately with buttermilk. Fold in nuts and the last addition of buttermilk. Do not overmix. Pour into prepared pan. Bake 30 minutes. Allow to cool and then frost with Peter Pan Frosting.
Peter Pan Frosting
1 cup cold butter
5 cups powdered sugar
1 tablespoon plus 1 teaspoon half and half or evaporated milk
Beat butter in a large mixing bowl until smooth (this works best if butter is cold.) Add egg and powdered sugar and beat just until combined. Add half and half or evaporated milk; beat until smooth and creamy. Spread on bars.
